Four Recipes for a Successful Cinco de Mayo in Quarantine

Cinco de Mayo is quite possibly one of my favorite holidays. I love it all: the music, the culture, and of course- THE FOOD! Give me tacos and tequila, and I'm a happy girl! And while typical Mexican fare can be a bit indulgent, it doesn't have to be! The below recipes are all light, refreshing and super easy to recreate. And while we may be celebrating in #quarantine fashion, I wanted to give you three simple, health-conscious recipes to kick up your Cinco de Mayo in style. Have a happy, health-fwd holiday my loves!
FWD Style Guacamole 
2 ripe avocados 
1 tbsp sweet onion, diced 
1 tsp jalepeno, minced 
1/2 lime, juiced 
1/2 tsp Himalayan sea salt 
1/2 tsp garlic salt 
Fresh cilantro, to taste 

To prepare: Mash avocados with a fork (or a mortar and pistol if you're fancy!). Chop all above ingredients, and slowly mix into the mashed avocado, add lime juice and season to taste. 
Serve with: Corn or gluten-free tortilla chips (Siete is my jam!) OR for a gut-supportive non-chip option, slice some jicama (a resistance starch and prebiotic fiber for your gut!
FWD Style Margarita 
1 part tequila (love me some Casamigos!) 
2 parts coconut water (natural electrolytes)
1 part triple sec 
1 tsp jalepeno, muddled 
1 lime, juiced 
1/2 tsp Himalayan sea salt (for the rim) 

To prepare: Everyone loves a good margarita (especially this girl!) but they don't always have to pack on the calories (and the hangover!) Line margarita rim with salt (dip in a wet paper towel and then twist in a plate full of salt). Combine the rest of the ingredients in a shaker (or blender!) with 2-3 ice cubes. Pour + serve! Like yours frozen? Add a little flavor twist with a small handful of frozen or fresh pineapple- you're welcome ;) 
FWD Style Mango Pico de Gallo 
2 medium tomatoes, diced 
1 mango, diced 
1/4 red or sweet onion, diced 
2 garlic cloves, minced 
1 lime, juiced 
Optional: 1/2 can black beans 
Sprinkle of: cayenne pepper, black pepper, Himalayan sea salt

To prepare: No frills + super delicious! Chop the above ingredients, mix together in a bowl and serve with jicama slices or tortilla chips. 

FWD Style Homemade Taco Seasoning 
Equal Parts: 
Chili Powder 
Cayenne Pepper 
Garlic Powder or Salt 
Black Pepper 
Sea Salt  

To prepare: Most taco seasoning packets add unnecessary sodium and processed ingredients for no reason, so I started making my own and it tastes JUST as delicious. You can use this to season ANY protein for your tacos: I've used this on fish, chicken, ground beef shrimp and black beans.
