The Perfect Summer Salad

Sweet summertime- my favorite season, and also one of the best times of the year to take advantage of fresh, local fruits & veggies! As we get ready to head into the holiday weekend, I know we may be celebrating a little differently this year, but feeling that desire to celebrate how we can nonetheless.

If you’re planning to BBQ or gather with an intimate group of friends & family this weekend, the indulgences can be plentiful. And if you’re anything like me- when it’s in front of you, it can be hard to say no! That’s why I like to be sure that I bring at least one healthy dish to the table- that’s full of fiber and nutrients so that I don’t feel totally guilty for indulging and enjoying.

I’m typically the girl who gets asked to bring the salads to the parties (suprise! lol) but when I do, I always am sure to pair together a combination of flavorful ingredients that feel satisfying, but also keep in mind a balance of protein, healthy fats and in this case, a touch of sweetness!

PEACH BASIL SUMMER SALAD (Serves 4-6)

  • 1 bunch of organic spinach, chopped
  • 2 fresh & ripe peaches (organic preferred), chopped
  • 1/2 small red onion, thinly sliced
  • 1 cup pecans, toasted with 2 tsp cinnamon, 1 tbsp maple syrup and roasted on 350 for 10-15 minutes, cooled and crushed
  • 1 small avocado, diced
  • 2 handfuls fresh basil, chopped
  • Optional: 1/2 cup crumbled feta cheese

Dressing: Equal parts extra virgin olive oil & apple cider vinegar, 2 tbsp dijon mustard, 1/2 tsp sea salt & black pepper.

Chop all salad ingredients and place into a large serving bowl. In a separate bowl or dressing shaker, whisk or shake the above dressing ingredients and drizzle over salad, tossing until evenly coated. Serve & enjoy!
